Easy Spring Easter Cupcakes with Vanilla

These Spring Easter Cupcakes are one of my favorite treats to make when the weather starts to warm up.

The soft pastel colors, swirls of frosting, and colorful sprinkles make them perfect for Easter celebrations, spring parties, or simply a fun afternoon of baking at home.

The pastel buttercream gives them a cheerful seasonal look, and you can customize the colors to match any spring gathering.

Ingredients for the cupcakes

  • ¼ cup (55g) softened butter
  • ¼ cup (55g) sugar
  • 1 egg
  • 1 tsp vanilla extract
  • ½ cup (55g) all-purpose flour
  • 1 tsp baking powder
  • 1 tbsp milk

  • ⅓ cup softened butter
  • 1 cup powdered sugar
  • 1 drop of food gel coloring
  • ¼ cup sprinkles
  • 1 tsp milk (optional)

How to Make Spring Easter Cupcakes

Preheat the oven to 180°C and line a muffin tin with cupcake cases.

In a bowl, cream together softened butter and sugar until light and fluffy.

Add an egg and vanilla extract.

Gradually incorporate the flour and baking powder. Finally, mix in the milk.

Spoon the batter into the prepared muffin tin, filling each cup about halfway.

Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean.

Allow the cupcakes to cool completely.

For the icing, beat the softened butter until creamy and fluffy.

Slowly add powdered sugar, and if needed, incorporate a splash of milk to achieve the desired consistency.

Divide the icing into three bowls and add a drop of food coloring to each bowl.

Transfer each colored icing into a piping bag with a star nozzle.

Once the cupcakes are cooled, pipe the colored icing onto each cupcake in a swirl pattern.

Method
 

  1. Preheat the oven to 180°C and line a muffin tin with cupcake cases.
  2. Cream the butter and sugar, then mix in the egg, vanilla, flour, baking powder, and milk.
  3. Divide the batter between the cupcake cases and bake for 12 to 15 minutes.
  4. Let cool completely.
  5. Beat the butter for the frosting, then gradually add the powdered sugar.
  6. Divide into three bowls and color each portion.
  7. Transfer to piping bags and pipe onto the cooled cupcakes.
  8. Finish with sprinkles and serve.
