Baked Parmesan Potato Bites

These baked Parmesan Potato Bites are a simple way to turn mashed potatoes into something a little different.

They’re cheesy, golden on the outside, and easy to make with basic ingredients.

This potato bites recipe works well as a snack, side dish, or appetizer, especially when you have leftover mashed potatoes to use up.

Ingredients

Potato Mixture:

  • 2 cups cold mashed potatoes (500 g)
  • ½ cup grated Parmesan cheese (60 g)
  • 2 cloves garlic, minced
  • 1 large egg
  • 2 tbsp chopped chives (optional) (8 g)
  • Pinch of sea salt and pepper

For Coating:

  • ½ cup all-purpose flour (60 g)
  • 2 large eggs, beaten
  • 1½ cups breadcrumbs (150 g)
  • Paprika and chives (optional)
  • ½ tsp garlic powder (1 g))
  • Salt and pepper

How to Make Cheese Potato Bites

1. Make the potato mixture:
In a large bowl, combine mashed potatoesParmesanminced garliceggchivessalt, and pepper until smooth.

2. Form the bites
Scoop out about 1 tablespoon of the mixture and roll into balls.

Place on a lined tray or plate.

3. Prepare the coating stations

Bowl 1: All-purpose flour

Bowl 2: Beaten eggs

Bowl 3: Breadcrumbs mixed with Italian seasoninggarlic powder, paprika and chopped chives if using, and salt and pepper.

Roll each potato ball in flour, dip in egg, and coat thoroughly with the breadcrumb mixture.

4. Fry
Heat 2 inches (5 cm) of oil in a heavy pan to 350°F (175°C). Fry in small batches for 3–4 minutes or until golden and crispy. Remove and drain on paper towels.
