Cheesy Mash Potato Bites

These baked Parmesan potato bites are crispy on the outside, soft and fluffy in the middle, and full of cheesy flavor. Made with mashed potatoes and simple ingredients, they work well as an appetizer, snack, or side dish.

Ingredients
  

Potato Mixture:
  • 2 cups cold mashed potatoes 500 g
  • ½ cup grated Parmesan cheese 60 g
  • 2 cloves garlic, minced
  • 1 large egg
  • Salt and pepper
For Coating:
  • ½ cup all-purpose flour 60 g
  • 2 large eggs, beaten
  • cups breadcrumbs 150 g
  • 1 tsp Italian seasoning 1 g
  • ½ tsp garlic powder 1 g
  • Paprika and chives, optional
  • Salt and pepper

Method
 

  1. Make the potato mixture:
  2. In a large bowl, combine mashed potatoes, Parmesan, minced garlic, egg, salt, and pepper until smooth.
  3. Form the bites:
  4. Scoop out about 1 tablespoon of the mixture and roll into balls.
  5. Place on a lined tray or plate.
  6. Prepare the coating stations:
  7. Bowl 1: All-purpose flour
  8. Bowl 2: Beaten eggs
  9. Bowl 3: Panko breadcrumbs mixed with Italian seasoning, garlic powder, paprika, salt, and pepper
  10. Coat the bites:
  11. Roll each potato ball in flour, dip in egg, and coat thoroughly with the breadcrumb mixture.
  12. Fry:
  13. Heat 2 inches (5 cm) of oil in a pan to 350°F (175°C).
  14. Fry in small batches for 3–4 minutes or until golden and crispy.
  15. Remove and drain on paper towels.
  16. Serve:
  17. Enjoy hot with your favorite dip like marinara, garlic aioli, or ranch.
