Fluffy Pumpkin Pancakes with Cinnamon
Pumpkin pancakes are one of my favorite breakfasts to make once Fall arrives.
They’re soft and fluffy, with pumpkin, cinnamon, and warm spices in every bite.
Serve them with maple syrup, lemon slices, butter, or a sprinkle of cinnamon for a cozy weekend breakfast.

Ingredients
Dry Ingredients
- 1/2 cup (65 g) all-purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp cinnamon
Wet Ingredients
- 1/2 cup (120 g) pumpkin purée (not pie filling)
- 1/2 cup (120 ml) milk
- 1 large egg
- 1 tbsp vegetable oil
- 1/2 tsp vanilla extract
- Zest of 1 small lemon
- 1–2 tbsp fresh lemon juice
Toppings
- Maple syrup
- Butter/yogurt/whipped cream

- Servings: 3 (about 6–8 small pancakes)

How to Make Pumpkin Pancakes
1. Mix dry ingredients
In a bowl, whisk flour, sugar, baking powder, baking soda, salt, and cinnamon.

2. Mix wet ingredients
In another bowl, whisk pumpkin purée, milk, egg, melted butter, vanilla, lemon zest, and lemon juice.

3. Combine
Pour wet into dry and stir gently until just mixed (small lumps are fine).

4. Rest (optional)
Let batter sit 5 minutes.
5. Cook
Heat a skillet over medium heat; lightly butter/oil it.
Scoop about 2–3 tbsp batter per pancake.
Cook for 2–3 min, until bubbles form and the edges look set.
Flip and cook 1–2 min more.
6. Serve
Top with maple syrup and a little extra lemon zest if you like.
