Ingredients

  • 1 cup semi-sweet chocolate chips
  • ½ cup Nutella
  • ¼ cup raw hazelnuts
  • 3 tbsp unsalted butter
  • 1 tbsp powdered sugar

Method

  1. Preheat the oven to 350°F (175°C).
  2. Spread the hazelnuts on a baking tray and roast for about 5 minutes.
  3. Let them cool slightly, then rub them between your hands to remove the skins.
  4. Place the peeled hazelnuts in a food processor and pulse until finely chopped.
  5. In a microwave-safe bowl, combine the Nutella and butter.
  6. Microwave for about 30 seconds, or until the butter has melted. Stir until smooth.
  7. Add the powdered sugar to the Nutella mixture and mix until fully combined.
  8. In a separate bowl, melt the chocolate chips in the microwave for about 2 minutes, stirring every 30 seconds until smooth.
  9. Spoon the melted chocolate into a bonbon mold, making sure each cavity is fully coated.
  10. Turn the mold upside down to let the excess chocolate drip out, then scrape off any extra chocolate.
  11. Place the mold in the fridge for 10 minutes, or until the chocolate is set but not fully hardened.
  12. Sprinkle the roasted hazelnuts into each cavity.
  13. Spoon the Nutella mixture into the mold, leaving a little space at the top.
  14. Cover with the remaining melted chocolate, tapping the mold gently on the counter to remove air bubbles.
  15. Scrape off any excess chocolate.
  16. Refrigerate for at least 30 minutes, or until fully set.
  17. Once hardened, remove the bonbons from the mold and enjoy.

Notes

This recipe includes powdered sugar and extra chocolate to help the bonbons firm up and release cleanly from the mold. While Nutella is already sweet, these ingredients improve texture and structure rather than changing the overall flavor. The result is a smooth center with a firm chocolate shell.
Time-Saving Tip: If you’re short on time and want to make this recipe even faster, you can use already roasted hazelnuts and skip the roasting step altogether.
