Ingredients
  

Filling
  • 3 apples Granny Smith + Honeycrisp, diced
  • 4 tbsp sugar 3 tbsp white + 1 tbsp brown
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
  • 1 tbsp butter
Assembly
  • 2 pie crust sheets
  • 1 beaten egg egg wash
Glaze
  • 1 cup powdered sugar
  • 1 –2 tbsp milk
  • ¼ tsp vanilla

Method
 

Prepare the Filling:
  1. Combine the diced apples, sugar, cinnamon, lemon juice, and melted butter in a medium bowl.
  2. Mix well and set aside.
Preheat the Oven:
  1. Preheat your oven to 375°F (190°C).
Roll Out the Crust:
  1. Roll out the pie crust sheets on a lightly floured surface.
  2. Cut out circles using a cookie cutter or a glass, about 4 inches in diameter.
Assemble the Pies:
  1. Place a spoonful of the apple filling in the center of each circle.
  2. Fold the dough over to create a half-moon shape and crimp the edges with a fork to seal.
Apply Egg Wash:
  1. Brush the tops of the mini pies with the beaten egg for a golden finish.
Bake:
  1. Arrange the mini pies on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
Prepare the Glaze:
  1. While the pies are baking, whisk together the powdered sugar, milk, and vanilla in a small bowl until smooth.
Glaze the Pies:
  1. Once the mini pies are out of the oven and slightly cooled, drizzle the glaze over the top before serving.
Serve:
  1. Arrange the apple hand pies in a serving tray or a plate.
